Detailed Introduction：
Daojiao Meatball Congee is a traditional favourite of Daojiao town in Dongguan. Fresh pork is hand-chopped and repeatedly pounded with an iron rod until gluey, then rolled into ping-pong-sized balls and cooked in rice porridge simmered until silky. The congee is rich with rice aroma and almost melts on the palate, while the meatballs are springy, juicy and deeply porky, revealing fine meat texture when bitten. It is finished with scallion, white pepper and a few drops of sesame oil, warming and comforting. A regular late-night supper in Dongguan and a soothing breakfast too, it is cooked to order and showcases the craft of hand-pounded meatballs.
