Detailed Introduction:
Sugar-Coated Taro is a traditional sweet dish from the Chaozhou region, often closing a Teochew banquet. It uses local fragrant taro cut into strips and first deep-fried until crisp outside and floury within, with a soft heart. In another pan, sugar and a little water are boiled to a thick syrup with large bubbles, then removed from the heat; the fried taro is poured in and stirred rapidly as it cools, until the syrup reverts into a snowy, brittle sugar shell on each strip. The result is crisp outside, floury inside, with a fresh-sweet sugar shell and rich taro aroma that cracks audibly on the bite. Sugar-reverting is a classic Teochew sugar technique that depends on exact syrup temperature and stirring timing—too hot and it won't set. Often served as a post-meal sweet, it is best hot for the crispiest shell; once cooled the shell turns slightly chewy yet keeps its mealy taro flavor.
