🍽️ Yinchuan Hui Stew

📍 Province:Ningxia 🏙️ City:Yinchuan
Introduction:
Vermicelli, meatballs and lamb stew.
Detailed Introduction:
Yinchuan Hui Stew is a traditional halal mixed stew of Yinchuan, Ningxia, representing local Hui cuisine. Handmade meatballs, layered pancake pieces, glass noodles, tofu, sliced lamb and seasonal vegetables are simmered together in a lamb broth, lifted with pepper and vinegar. Rich in ingredients, the soup is deep and savory; the meatballs crisp outside and tender within, the noodles soft and slippery, tangy, peppery and warming. A strong lamb stock and separately prepping each component before combining are the craft. In autumn and winter, Yinchuan locals gather over a big bowl with steamed flower buns or flatbread. It fuses the Hui tradition of fried meatballs with lamb-broth warmth, the most substantial home taste of Ningxia's southland beyond the Great Wall.
